Banana Bread with Cinnamon Sugar

by Valentina Concordia

Does the world really need another banana bread recipe? When it's this good, it does. This bread is soft, rich and comforting whilst still feeling light and fluffy. It's also packed with dark chocolate and walnuts, and topped with cinnamon sugar which caramelises in the oven. We're pretty sure it doesn't get any better than that.

Get your ingredients ready and cook along with Val in her kitchen - just head to our IGTV here.

Cook Time

Makes

1 loaf

Ingredients

4 ripe bananas, peeled
60g brown sugar
40g white sugar
80ml olive oil (sub for sunflower, melted coconut or rapeseed)
40ml plant based milk
1 tsp vanilla extract
1/2 tsp salt
225g flour (we used spelt flour)
1 tsp bicarbonate of soda
1/2 tsp baking powder
1 tsp cinnamon
1/2 tsp ground nutmeg
100g dark chocolate chunks, optional
50g walnuts, optional

Method

STEP 1

Preheat your oven to 180°C. Place the bananas in a large bowl and mash with a fork until completely puréed. Add 1/2 cup of brown sugar, the white sugar, oil, milk, vanilla extract, and 1/2 teaspoonful of salt and whisk until combined.

STEP 2

In a large bowl, mix the flour, baking soda, baking powder, cinnamon and nutmeg. Mix the dry ingredients into the wet ingredient. Fold in the chocolate chunks and walnuts, if using.

STEP 3

Line a loaf tin with parchment paper and pour in the mixture.

STEP 4

In a small bowl, combine the remaining brown sugar and cinnamon. Sprinkle over the mixture. Bake for 50-60 minutes, until a toothpick inserted in the middle comes out clean.

STEP 5

Let cool completely before slicing. Enjoy!
